Salmon recipe

Prepare salmon filet with seasoned salt and pepper to taste and set aside.  Start with an empty cast iron skillet.  Heat skillet on stovetop using Med-Hi heat. Add about 1 Tablespoon of butter and 1 Tablespoon of olive oil.  When oil is hot (not smoking but shimmering) add salmon filet, skin side down, and cook for about four minutes.  Allow a good sear – don’t touch it or move it until crust is perfect on the bottom.  Flip fish over and sear for another two to three minutes – again, do not move it until crust has formed on the bottom.  Remove to plate and serve with a simple pat of butter on top or a more elaborate sauce!  Moist and flavorful every time!
